Beef Eye Fillet Steaks with Blue Cheese Butter

300g packet Silver Fern Farms Beef Eye Fillet Steaks
1 Tbsp extra virgin olive oil
100gm butter, softened
100gm blue cheese
1 tbsp chopped chives
¼ tsp nutmeg

Remove Silver Fern Farms Beef Eye Fillet Steaks from packaging and rub with oil. Season with salt and freshly ground black pepper. Allow the meat to rest at room temp for 10 minutes.

Combine butter, blue cheese, chives and nutmeg in a small bowl. Spoon into plastic wrap and roll into a cylinder. Twist ends to seal. Chill in fridge for 10 minutes.

Heat a skillet, frying pan or barbecue plate over medium to high heat. Grill the Silver Fern Farms Beef Eye Fillet Steaks for 4 minutes one side. Turn and grill for a further 3 mins the next, turn and sear the sides for 1 minute, for medium-rare. Leave to rest, covered, for 5 minutes.

Thinly slice the eye fillet across the grain and arrange on a serving plate. Top with dabs of the blue cheese butter.
