Tandoori Salmon Tray Bake

2 x 180gm Salmon portions
2 Tbsp Tandoori paste
1 zucchini (courgette), chopped
6 tomatoes, halved or quarters depending on size
1/2 red onion, sliced into chunks
1 lemon, cut into pieces
2 garlic cloves
100 gm green beans
4 Tbsp coconut cream
1 Tbsp Man Grind
Coriander, to serve

Cut salmon portions in half lengthways and remove any bones. Using the back of a spoon, rub the paste over each portion.
Preheat oven to 160c fan bake.
Line a roasting tray with baking paper.
Prepare your vegetables and scatter on tray, season with Man Grind and cook for 15 minutes.
Add salmon to the tray, moving vegetables around to fit in and cook for a further 10 minutes.
Once salmon & vegetables are cooked, remove and put on a preheated serving platter.
Drizzle over coconut cream and sprinkle coriander. Serve immediately.
