Spiced Lamb Rack with Lemon Couscous, Garlic Beans and Yoghurt Recipe

Lamb:
1 pkt Gourmet Direct Lamb French Racks
1 tsp Ground Turmeric
2 Tbsp Ground Cumin
1 Tbsp Ground Ginger
1/2 tsp Ground Cinnamon
3 Tbsp Olive Oil

Couscous:
250g instant Couscous
1/2 tsp Ground Turmeric
1/2 tsp Salt
Juice and zest of 1 Large Lemon
3 Tbsp Extra Virgin Olive Oil

Beans:
3 Tbsp Olive Oil
300g Green Beans blanched in boiling water for 1 minute, well drained
1 Clove Garlic, finely chopped
1/2 Cup Plain Yoghurt

Method:

Couscous: Put everything into a heatproof bowl and add enough boiling water to cover. Quickly mix well and cover tightly. Set aside 25 minutes. Uncover and fluff up with a fork. It will still be hot enough to serve.Lamb: Mix all the spices with the Oil and rub all over the Lamb racks. Set aside to marinate overnight or minimum 1 hour.

Preheat the oven to 200ºC.

Heat the frying pan until hot and add the Lamb Racks. Brown all over; transfer the racks to an ovenproof pan and place in the oven for 15 minutes. Remove from the oven and rest 10 minutes in a warm place. Slice each rack in half.Beans: Heat the Oil over moderate heat and add the Garlic and Beans. Fry until the Beans are hot and the Garlic beginning to brown.

Serve the Lamb on the Couscous with the Beans on the side and the Yoghurt over the Beans.
