Fresh Salmon Fillet with Really Good Maple Syrup Glaze

1 x fresh Salmon Fillet (pin boned, approx 1.1kg)
4 tablespoons of good quality, preferably Canadian Maple Syrup
Cube of fresh ginger, peeled, and finely chopped
Dash of Verjuice

 

Pierce Salmon fillet (flesh side) with a toothpick. Gently warm the maple syrup and ginger through, and add a dash of Verjuice – about a tablespoon (enough to make sure not sickly sweet). Heat through.

At this point, sieve the warmed mixture to remove the ginger (or, if you like a really gingery taste, feel free to leave it in) and pour over Salmon and marinate in the fridge for 2 hours. Drain off the marinade and reserve in cup.

Bake in the oven at 180 degrees celcius for 30 minutes, and keep basting with the reserved marinade about every 10 minutes.

Rest, and serve with a warmed potato salad and a crisp green salad. Simple!
