Beef Stir-Fry with Blueberry Hot Sauce

350g packet Silver Fern Farms Beef Stir-Fry
1 tbsp extra virgin olive oil
1 tsp paprika
1 tsp cinnamon
¼ tsp allspice 5-6 threads saffron
New season pea tendrils, to serve
Pomegranate arils, to serve
Lemon wedges, to serve


1 cup blueberries
1 tsp caster sugar
1 tsp ground ginger
2 red chillies, finely sliced
¼ cup apple cider vinegar


Remove Silver Fern Farms Beef Stir-Fry from packaging and rub with oil. Mix together the paprika, cinnamon, allspice and saffron and rub over the meat. Season with sea salt flakes and freshly ground black pepper. Allow the meat to rest at room temperature for 10 minutes.

Meanwhile, to make blueberry hot sauce, add blueberries, sugar, ginger, chilli and vinegar in a small saucepan over a medium heat. Cook for 5-8 minutes, until blueberries begin to break down.

Heat a large frying pan, wok or grill plate over a medium to high heat. Fry the Silver Fern Farms Beef Stir-Fry for 1 mins one side. Turn and fry for a further minute, for medium-rare. Leave to rest, covered, for 5 minutes.

Serve beef stir-fry on a platter garnished with pea tendrils and pomegranate arils. Serve with blueberry hot sauce.
