Avocado Wraps with Smoked Salmon

1 ½ Cups diced Avocadoes
½ Cup diced Cherry Tomatoes
1 tablespoon red onion
200gm Hot Smoked or Cold Smoked Salmon
½ cup prepared salsa
Diced Cos Lettuce
Salt and Pepper

1 tablespoon Olive Oil
1 tablespoon fresh Lime Juice
1 tablespoon Crème Fraiche
½ teaspoon Pure Wasabi


Gently toss Avocado, tomatoes and onion in a medium bowl. Make dressing by combining ingredients to taste and dress the avocado misture. You might like to add little more crème fraiche and lime juice to suit. Add Salmon, and gently combine.

Assemble tortillas by placing approximately 2 -3 tablespoons of the avocado mixture onto the centre of the tortilla and a handful of the cos. Fold neatly in half, (bottom to top, with fold at bottom and uneven edge at top. Roll left to right, starting from bottom left corner, to create a cone shape with opening at top.
