Crisp Skinned Salmon Recipe

1 Gourmet Direct Salmon Fillet
1 packet Dill Mayonnaise
Chopped Fresh Dill to garnish
Sea Salt
Freshly Ground Black Pepper
2 tbsp. Olive Oil
15 small New Potatoes
Juice of one Lemon
Place the Salmon Fillet in a shallow roasting pan skin side up. Rub the skin with Olive Oil and season with Pepper and a generous amount of Sea Salt. Place under a preheated grill until the skin bubbles up and colours. Turn the grill off and move the Fish down the oven, away from the grill. Rest for 4 minutes. Cook the New Potatoes drain and mix the Dill Mayonnaise through the Potatoes. Place on a platter and sprinkle with fresh Dill. Cut Salmon into 5 portions and plate. Squeeze the Lemon juice into the roasting pan and mix with the salmon juices. Pour over the Salmon. Serve with a Green Salad.
