Smoky Lemon Chicken

½ cup flour
1 tablespoon smoked paprika
Freshly ground black pepper
Flaky sea salt
100gm butter
Lemon sauce
2 lemons, zested and juiced
1 clove fresh crushed garlic
Freshly ground black pepper
Flaky sea salt
Olive Oil
1 tablespoon Soy Sauce
1 teaspoon brown sugar
Your choice of chopped fresh herbs, Italian parsley, Marjoram or Thyme
Method
Make the sauce by combining all ingredients in a glass bowl and set aside in the fridge for 30 minutes, or up to an hour.
Preheat your oven to about 170 degrees celsius.
Trim the Chicken of any fat and cut each thigh in two. Mix flour, paprika, salt and pepper in a plastic bag, add the Chicken and turn to coat.
Ensuring any excess rub is shaken off, place the Chicken on a greased oven tray, and pour melted butter over the top. Cook in oven for approx 25 minutes. Remove from oven to turn the Chicken pieces and pour the Sauce over then return to oven to cook for approx another 25 minutes.
Serve with ciabatta, fresh green salad or vegetables such as steamed green beans and broccolini.
