Simple BBQ Beef Wing Roast by Pia Russell

1 x Beef Wing Rib Roast
Salt
Pepper
4 Garlic gloves Crushed
10 X 10cm stalks of fresh Rosemary
Tablespoon of Olive Oil

 

Take the beef out of Fridge 30minutes prior to cooking.  Remove from packaging and pat dry.  Rub Olive Oil on beef.  Rub in salt and pepper to your tastes.  Next, rub on the crushed garlic.  Cover and leave in a cool spot on the kitchen bench for 30 minutes.

At this stage, turn oven onto 160 degrees C.  Heat your BBQ to medium heat.  Or, if like me you use a wood bbq let it die down so the flames are not leaping through the grate. After 30 minutes beef should be at room tempature.  Place rosemary on grill and beef on top.  Sear all sides of beef, turning to colour all sides and create a crust that is nice and brown. If too hot, turn your grill down so Beef doesn’t burn.  Searing the beef should take 10-15 minutes.

Take beef off BBQ and place in roasting dish in oven.  Cook 30-40 minutes. (In my oven 30minutes will produce a rare beef and 40 minutes will produce medium rare, but all ovens will vary)

Take beef out of oven and cover and rest for 30minutes.  Carve and serve with Mustard Makers Horseradish Mustard, new potatoes and fresh green salad.
