Kate’s Chicken Schnitzel

500gm Chicken Breasts
Olive Oil
Butter
2-3 eggs, beaten
1/2 cup white flour
CRUMB MIX
1 cup panko breadcrumbs
1/3 cup parmesan cheese, finely grated
1/4 cup sesame seeds
1 tsp mustard powder
Pinch of cayenne pepper
1/2 tsp salt
1/2 tsp pepper
TO SERVE
Potatoes
Dill Mayonnaise or Aioli
Green Salad
Preheat oven to 160c.
Beat eggs together in a bowl. Place flour in another bowl.
Slice chicken breast into 1.5 cm slices. Slice with the grain.
Coat the sliced breasts in flour, then egg, and then the crumb mix.
Make sure you really press the crumb mix into the chicken well to get a good coating.
In a medium pan oiled with half butter, half oil lightly fry the chicken slices for 1-2 minutes each side until golden brown.
When all the chicken schnitzels are browned, finish in the oven for approx. 10-15 mins.
Be careful not to overcook.
Serve with Dill Mayo, fresh salad and mashed potatoes, or as a tasty chicken burger with fries.
