Easy Peasy Veal Medallions, Miso and Blue Cheese Sauce, Green Beans and Sesame

Bring stock and miso paste to the boil with soy and sugar.
Reduce to a simmer and whisk in blue cheese.
Keep the sauce warm for serving.
Lightly salt the Veal and pan fry until golden on 1 side, approx. 2-3 mins, add butter and flip over Veal.
Cook for another 2-3 minutes until medium rare – medium.
Take out of the pan and rest the Veal for a few minutes.
Blanch the green beans in boiling salted water, drain beans and slice in half long ways or on an angle.
Drizzle with sesame oil, salt, and sesame seeds.
Slice the Veal and arrange with the beans. Serve with the miso and blue cheese sauce.
