Chicken Cordon Bleu

600 g chicken breast, skinless 2 large breast or 4 small
1 cup lemon herb crumb
1 egg
1/2 cup flour
100 g shaved ham
4 swiss cheese slices
Olive oil

6 potatoes
2 cups frozen baby beans

Pre heat oven to 180c
Cut each breast in half horizontally so you have four schnitzels
Place ham and cheese on each breast
Roll the chicken breast up around the ham and cheese to form a parcel. Set up a crumbing sytem with flour, egg, lemon herb crumb.
Coat each cordon bleu in flour, egg, then lemon herb crumb. Place on a baking tray and drizzle with a very small amount of oil
Bake for 30 minutes

Boil and mash potatoes as per normal, season with butter and Man Grind. Steam or boil frozen beans.
Serve alongside the cordon bleu.

Additionally a simple white sauce can be made to serve with the cordon bleu, generously seasoned with Man Grind and Wholegrain Mustard.
