1kg good quality thick-cut streaky bacon
200ml of dark beer
200ml maple syrup
Wild Fennel Co. Pocket pepper

1-2 ripe avocados, sliced
Pakari Aged cheddar, sliced
Cos lettuce leaves
Dill Mayonnaise
Sea Salt
Cracked Pepper

Mix the dark beer and maple syrup together.

Lay the streaky bacon in a shallow dish and pour over the beer and maple mix. cover and leave to marinate overnight in the fridge.

Remove the bacon and pat dry. Strain the marinade and freeze it for next time.
Place the bacon on a greased baking tray and sprinkle generously with the Wild Fennel Co. Pocket Pepper and cook under a hot grill until crisp.

Cut croissants in half lengthways. Spread a liberal amount on dill mayo on one side.
Add sliced pakari cheddar, bacon, avocado and cos lettuce to each croissant.
Season with black pepper and sea salt
Stack up on a large plate and let people help themselves. Enjoy!!!
