Barbecued Lamb Kebabs with mushrooms and red onions

1 pack Silver Fern Farms Lamb Rumps
8 mushrooms
1 red onion, cut into 8 wedges
1 red capsicum, cut into 8 wedges
1 Tbsp extra-virgin olive oil
1 garlic clove, crushed
Chimichurri or pesto, to serve

Preheat barbecue or grill to medium. 

Remove Silver Fern Farms Lamb Rumps from fridge and packaging. 

Cut each rump into 8 cubes. Season. 

Thread cubes onto 4 skewers alternately with vegetables. Brush with oil and garlic. Barbecue or grill, turning continuously, for 5-6 minutes or until cooked through. 

Serve topped with chimichurri or pesto.
