Braised Veal Shanks with Herbed Yoghurt Recipe

Ingredients:
1 pack Gourmet Direct Meat Glaze

8 Gourmet Direct Veal Shanks
5 Cloves Garlic
2 Tbsp Fennel Seeds (Optional) – toasted and ground
2 Tbsp Cumin Seeds – toasted and ground
Juice of 2 lemons
½ Cup good White Wine
½ Cup Water

Herbed Yoghurt:
1 Cup Plain Yoghurt
½ Cup chopped Fresh Mint
½ Cup Fresh Parsley
Salt and Pepper
Lemon juice

Veal Method:
Bone veal carefully by cutting the meat from around the bones, in one piece! Preheat oven to 200°C.  Brown Veal in a medium hot pan with a little oil. Place Veal and braising ingredients in a roasting dish just big enough to hold it all.  Cover tightly and back for approx 2 hours or until tender.  (Alternatively braise in a crock-pot on high for 3-4 hours.)  The meat should be coming away from the bone when cooked.

For the Herbed Yoghurt
Process all ingredients except Yoghurt, until smooth.  Blend with the yoghurt.  Season with Salt and Pepper to taste.

Serve on a bed of Steamed Couscous, with Crisp Fresh Salad Greens.  Serve Herbed Yoghurt in a side bowl.
