Beef Ribeye with a Brandy Jus Recipe

2 cloves of Garlic cut into slithers
1 Tbsp Soy Sauce
Fresh Oregano and Thyme Sprigs
Using a sharp knife, make deep slits into the beef and insert garlic slithers. Place meat in roasting pan and brush surface with soy sauce and season. Leave to stand for 1 hour.
Preheat oven to 180° C, Cook for 40 minutes for rare, increase cooking time for 10- 15 minutes for medium to well done.
Remove beef from roasting pan and cover with foil and let stand in a warm place for 10-15 minutes before slicing.
Place roasting pan over a medium heat, add meat glaze and brandy, simmer for a few minutes until mixture thickens. Garnish with oregano and thyme sprigs.
Slice beef and drizzle with sauce and serve with fresh summer vegetables.
